Chief Baker

Business Unit:  The Peninsula Hong Kong
Location:  Tsim Sha Tsui

Key Accountabilities:


  • Drives the day-to-day operation of the Hotel’s bakery
  • Providing an international selection of freshly-baked breads, rolls, breakfast items and bakery specialities to all Restaurants, Banqueting and other areas as needed
  • Supports the Executive Pastry Chef’s training, coaching and developing of all chefs in the team
  • Ensures best-possible stock turnover to ensure freshness of products
  • Assists the Executive Pastry Chef in keeping costs in line with established and agreed budgets


General Requirements:


  • Years of Experience: 6 to 8 years’ experience as baker with hotel background or/and bakery experience, international experience, fine dining background and diploma as master baker is an advantage
  • Education Qualification: Food hygiene certificate, Secondary / High school is essential and preferably with Hygiene Manager certificate
  • Technical Knowledge: Knowledge of hotel’s standard on food production, Knowledge in International bread selection, Knowledge in checking quality of raw materials and food production, Knowledge of stock control systems and procedures, Ability to check stock and prepare details for requisitions
