Sous Chef - Pastry

Key Accountabilities

  • While assisting Pastry Chef, be responsible for all activities in Pastry Kitchen includes supervision of entire food production, staff scheduling, delegation of job tasks and monitoring.
  • Develop new menus for the hotel considering factors such as product availability, service cost, marketing conditions, number to be served, seasonal factors, etc. and to establish and maintain appropriate food portions with respect to the hotel’s pricing policy.
  • Liaising with purchasing to make sure all food products purchased are the best price available. 
  • Hire, train, mentor, motivate, supervise and discipline all kitchen department employees.
  • Ensure that sanitation standards as set forth by The Peninsula Tokyo and the state are in compliance as well as the cleanliness and neatness of the kitchen.


General Requirements

  • Fluent English speaker and preferably Japanese with great respect for Japanese culture, 5-star hotel working experience will be an advantage.
  • Minimum 10-year kitchen practical experience, of which 3 years in managerial position from multinational companies or hospitality operations.
  • Seasonal knowledge in international cuisine, including food preparation and presentation.
  • knowledge in costing and pricing of food and beverage items.
  • Leadership and management skills.
