Pastry Sous Chef

Working alongside a wonderful team at The Peninsula Tokyo, we are seeking a Pastry Sous Chef to achieve the company’s objectives and create a memorable guest experience.

Key Accountabilities:

  • Control the daily requisitions and Kitchen inter-transfers.
  • Assist in creating new Menus with detailed recipes, photographs and cost cards.
  • Submit new proposals to Executive Pastry Chef for discussion prior to food tasting.
  • Assist Executive Pastry Chef to keep the food cost for the assigned kitchen within the budget.        
  • Ensure that the hotel cost control policies and procedures are followed.
  • Prevent wastage of surplus stock without undue sacrifice on food quality.
  • Control effective storage and stock levels, while always being cost conscious.
  • Supervise and allocate work to staff according to their knowledge and skill level.
  • Oversee and / or conduct trainings for staff as well as implement regular training programs.
  • Inform Executive Pastry Chef any waste, left over items of food that can be utilized in other areas.
  • Assist Executive Pastry Chef to ensure the hotel’s high standards are maintained and improved continually.
  • Look continuously for ways to improve the quality and service and to meet or surpass the required standards of performance.
  • Actively support the work and decisions of all teams and committees. 

 

General Requirements:

  • Diploma from culinary school or apprenticeship (or equivalent).
  • Minimum 5 years of experience in 5-star hotels or equivalent restaurant establishments.
  • Previous management experience in a la carte or production kitchen.
  • Fluent in Japanese, conversational English proficiency is an advantage.
