Stewarding and Hygiene Manager

Business Unit:  The Peninsula Manila
Location:  Makati City

Overview of the role

We are looking for an individual who will be responsible for developing and implementing kitchen cleanliness and material control together with health and safety best practices in the whole hotel and ensuring that the hotel complies with local regulations and international hotel and restaurant standards.


Key accountabilities

  • Ensure that the Food Safety Management System (PFSMS, HACCP, ISO 22000:2005) is implemented, maintained, and updated in accordance with all the policies, procedures and work instructions established
  • Monitors, evaluates, and reviews the current Health and Safety Policies and as need arises, develop, or introduce new systems that will prevent, control, eliminate or reduce any health and safety risks for all the employees, guests, and properties.
  • Conducts daily or regular inspections or walk through in each department to assess and monitor the effectivity of implementing the policies and procedures.
  • Responsible for establishing working relations with the different departments to be able to maintain a safe working environment for all team members and guests.
  • Ensures all staff actively participate in the preservation of the environment and reuse, recycle, or reduce whenever possible.


General Requirements

  • At least 2 years’ experience as hotel hygienist and / or Chief Steward
  • Food Technologist or Environmental Health or Food Science and have good auditing skills
  • Familiar to Food Hygiene and Food safety and HACCP trained
  • Excellent knowledge of leading edge Hygiene and Sanitation related practices through regular attendance in International Food Safety
  • Good practical understanding of FSMS policies and procedures
