Chef De Cuisine - Fine Dining
Overview of the role
We are looking for top-caliber, highly motivated, upbeat hospitality professionals to take on the challenge of becoming a world-class hotelier. The perfect candidate shall ensure the effective performance of Inter-Kitchen communication, meetings, technical knowledge and job skills training for all food procedures, create enthusiasm for training development amongst his subordinates, motivates and leads by example, communication of food trends, and market needs to his staff, and communication of local requirements food sanitation laws, safety regulations, and other to all staff.
Key Accountabilities
- Prepares weekly work schedule for his subordinates
- Assists the Executive Chef in constantly finding ways to further improve the Food cost through the strategic purchasing, with negatively affecting pre-determined quality standards.
- Ensures that positive working relations with non-Food and Beverage departments are fostered in giving cooperation at all times.
- Relates guests’ comments, positive or negative to the Executive Chef and takes proper actions.
- Assists the Executive Chef in compiling the annual marketing plans and budgets.
General Requirements
- At least 3-5 years’ experience in Culinary/Management Skills in a 5 Star Hotel, strong Knowledge of Fine Dining, previous Chef De Cuisine
- Culinary Degree or Bachelor in Hotel Restaurant Management, HACCP Certification
- Technical knowledge and job skills training for all food procedures. Knowledge in up to date food preparation and presentation. Able to run a high volume consistent production.
- Communicates food trends and market needs to staff, Organizational and planning skills in project conceptualization and execution
- Possess a strong command in hygiene and food safety standards. Strong leadership skills, self-motivated, a dynamic kitchen leader
