Chef De Cuisine, All day Dining

Business Unit:  The Peninsula London Corporate Office
Location:  London

The Peninsula London, superbly located at 1-5 Grosvenor Place in Belgravia, will overlook Hyde Park Corner, the Wellington Arch, Green Park and the gardens of Buckingham Palace. Upon completion, the hotel will have 190 guestrooms with 25 luxury Peninsula-branded residential apartments. The construction budget for the project is in the region of £800 million and our ambition is for the hotel and residences to set new standards in luxury and service in the London market with completion currently scheduled for early 2023. The Peninsula London is seeking to hire an all day dining Chef who has strong experience opening and managing an all-day dining kitchen, whilst supervising and developing the brigade.

Key accountabilities

 

  • Lead and coach the team, in particular overseeing scheduling, delegation of duties, monitoring and supervision of service whilst championing the Peninsula culture.
  • Maintain communication across all sections of the kitchen and with other departments.
  • Assists the Executive Chef in menu development and ensure high quality produce is procured.
  • Manage and follow control cost control policies and procedures are followed.
  • Maintain the highest level of health and safety and environmental hygiene.
  • Hire, develop, motivate, supervise, and coach department employees.

 

General requirements

 

  • Minimum 6 years in a similar role in a luxury hotel or fine dining restaurant establishments  (pre-opening experience is highly desirable).
  • Is a naturally organised and creative .
  • Strong people leader having prior experience managing diverse teams.
  • Fluent English language skills and presentation ability.
  • Self-starter, extensive culinary knowledge in both classical and current culinary trends, and financial acumen (budgeting).
