Director of Food and Beverage (London opening)

The Peninsula London, superbly located at 1-5 Grosvenor Place in Belgravia, will overlook Hyde Park Corner, the Wellington Arch, Green Park and the gardens of Buckingham Palace. Upon completion, the hotel will have 189 guestrooms with 26 luxury Peninsula-branded residential apartments. The construction budget for the project is in the region of £800 million and our ambition is for the hotel and residences to set new standards in luxury and service in the London market with completion currently scheduled for 2022.Located in the highly prestigious Belgravia district of London, The Peninsula London is seeking to hire an influential Director of F&B who has strong experience leading world class food and beverage operations will lead this property through the opening and operational phases.

Key Accountabilities:

  • Responsible for planning, organizing and developing the overall strategy for pre and post opening operations relating to Food and Beverage in accordance with The Peninsula standards and hotel guidelines.
  • Support talent selection and development activities to ensure the F&B department is accurately staffed whilst developing a culture which welcomes new employees into the global Peninsula family
  • Develop and contribute to strategic planning with particular focus on all pre-opening objectives including managing, influencing and executing key initiatives and stakeholders
  • Ensure that the highest degree of quality guest and employee care is maintained post opening. Specific responsibilities include overseeing Food and Beverage products, customer service delivery, cleaning and maintenance work throughout the hotel, restaurants, bars, banquet halls, room service, kitchens, the staff restaurant, stewarding and storerooms and those areas under Food and Beverage.
  • Plan and lead product and service enhancement ideas to drive the Food and Beverage offerings to the next level and to be a champion within the industry 
  • Liaise extensively with various departments to coordinate branding and sales initiatives for Food and Beverage to drive awareness, collaborations and cross promotions
  • Prepares annual recommendations for capital improvements and be able to influence finance and other stakeholders
  • Develop an operating budget for each of the department’s revenue outlets. Ensure corrective action and strategies are implemented as needed to ensure budgetary goals are attained
  • Review and analyse financial projections and operating statements in order to manage costs, improve revenue and ensure budgets are achieved


Job Specifications:

  • Degree in Hospitality Management or equivalent. 
  • Minimum of 4 years in a similar position at a luxury hotel or large hospitality group
  • Experience developing a team and service offering which excels within various industry standards such as Michelin star is highly advantageous 
  • 10 years’ experience in a leadership role with a strong inclination to selecting and nurturing talent and building culture within an F&B department
  • Strong knowledge of banqueting, fine dining and beverage operations
  • Very strong analytical, financial and project coordination skills
  • Experience working within the United Kingdom and pre-opening of a luxury hotel is highly preferred
