Chef De Cuisine - The Lobby

The Peninsula London is delighted to announce that we are seeking for a Chef de Cuisine to join our Culinary Team. This position is critical to the success of guest experience, providing a quality menu in partnership with high levels of service within the Lobby of the hotel. The Peninsula Hotels are renowned for the Lobby experience, with live music, a luxurious setting, and food and beverage service offering at the highest level; which, our guests have become accustomed to and that is synonymous with our brand.

 

The Chef de Cuisine - The Lobby Restaurant will lead a team of 15+ Chefs across a busy breakfast, lunch, afternoon tea and dinner service.

Key accountabilities

 

  • Lead and coach the team, in particular overseeing scheduling, delegation of duties, monitoring and supervision of service whilst championing the Peninsula culture.
  • Maintain communication across all sections of the kitchen and with other departments.
  • Assists the Executive Chef in menu development and ensure high quality produce is procured.
  • Manage and follow control cost control policies and procedures are followed.
  • Maintain the highest level of health and safety and environmental hygiene.
  • Hire, develop, motivate, supervise, and coach department employees.

 

General requirements

 

  • Minimum 6 years in a similar role in a luxury hotel or fine dining restaurant establishments  (pre-opening experience is highly desirable).
  • Is a naturally organised and creative .
  • Strong people leader having prior experience managing diverse teams.
  • Fluent English language skills and presentation ability.
  • Self-starter, extensive culinary knowledge in both classical and current culinary trends, and financial acumen (budgeting).
