Key accountabilities

 

  • Ensuring production in the restaurant at high standards 

  • Overseeing all pastry R&D activities creatively and innovatively and developing new recipes.

  • Maintaining and setting adherence standards for product quality, consistency, presentation, portioning, garnishment, and utilization goals

  • Coordinating and directing all aspects of the Signature Restaurant pastry & bakery operation and collaborates with the Food and Beverage team and all necessary stakeholders to achieve marketing and business goals and objectives.

  • Maintaining up to date technical worksheets, recipes and costings and ensures understanding and compliance from team members.

  • Controlling the ordering and requisitions to achieve budgeted costs.

  • Ensuring the hygiene and cleanliness of the pastry kitchen and storage areas with the highest standard of food safety.

 

General requirements

 

  • Minimum 4 years of experience in the same position and experience in a la carte restaurant kitchens, luxury hotel at high standards; Michelin or 50 Best restaurants will be plus.

  • Extensive pastry technical knowledge and current culinary trends.

  • Ability to maintain an extremely sanitary environment while working.

  • High level of creativity.

  • Paying attention to details and excellence.

  • Ability to communicate effectively with the team.
