Banquet Chef

The Peninsula Istanbul is located in the historic Karaköy area overlooking the Bosphorus – the meeting point of Asia and Europe. The hotel will feature 177 luxurious guest rooms and suites, a grand ballroom with sweeping views of the Bosphorus, indoor and outdoor swimming pools, spa and a verdant garden on the waterfront. As we continue to expand the pre-opening team, The Peninsula Istanbul is seeking to hire a Banquet Chef.

Key accountabilities

 

  • Engage with clients during the pre-event planning to personalize the experience. 
  • Produces all food required for the assigned kitchen and controls the daily ordering and requisitions to meet budgeted food cost.
  • Supervises and allocates work to staff according to their knowledge and skill level.
  • Keeps the food cost for the assigned kitchen within the budget.
  • Ensures that the hotel cost control policies and procedures are followed and prevents wastage of surplus stock without undue sacrifice on food quality.
  • Is responsible for the hygiene and cleanliness of the assigned kitchen, food production and food storage areas and always ensures a high standard of food quality safety.
  • Always keeps the kitchen equipment in good condition to maximize its operating life.
  • Maintains up to date technical worksheets, recipes and costings and ensures understanding and compliance from team members.  

 


General requirements

 

  • Minimum 6 years’ experience in 5-star hotel or equal banquet operations with similar size operation.  
  • Extensive culinary knowledge in both classical and current culinary trends.                                            
  • Extensive experience in management of cooks. Creativity to create dishes on brand with the restaurant.                                                  
  • Skills for the planning and execution of large-scale events in various locations at the same time.
  • Ability to maintain an extremely sanitary environment while working.
  • Ability to communicate effectively with the team.
  • High School Diploma or diploma from culinary school or apprenticeship (or equivalent). 
  • Fluent English and Turkish communication proficiency.
