Sous Chef

Key Accountabilities:


  • Assists the Executive Pastry Chef with daily operation of the Pastry and Bakery Kitchen, providing service to all Restaurants, Banqueting, Room Service, the Boutique, China Clipper, all Suites with private events and Outside Caterings as needed. 

  • Assists Executive Pastry Chef to manage Section Head Cooks, Head Baker, Senior Pastry Cooks, Senior Bakers and Commis

  • Assists with creating, developing, costing and implementing of new dishes and desserts.

  • Supports training, coaching and developing efforts of all chefs in the team. 

  • Adheres to all relevant health and safety codes as stipulated by the Hotel and the local health authorities (FEHD). 

  • Fully supports and contributes to the company’s CSR initiatives.

  • Runs the Pastry and Bakery Kitchen in all aspects during the Executive Pastry Chef’s absence.

  • Ensures all food is produced to the highest standard of freshness and taste

  • Follows and enforces all recipes and standards for food production

  • Sources best quality ingredients and incorporating them into the relevant outlet’s menus

  • Follows and enforces all recipes and standards for food production

  • Conducts daily checks of quality of produced items



Job Requirements:


  • Secondary/ High school, with relevant food hygiene certificate. Hygiene Manager certificate is an advantage

  • Minimum of 3 years’ experience as Pastry Chef de Partie, with restaurant and hotel background. International experience and Fine dining background is an advantage

  • Good command in both English and Cantonese

  • Computer Knowledge: Basic knowledge of Microsoft Office applications

  • Possess knowledge of hotel’s standard on food production; knowledge in International pastry and bakery cuisine; knowledge in checking quality of raw materials and food production; knowledge of stock control systems and procedures.
