Sous Chef, Gaddi's Kitchen

Sous Chef - Gaddi's Kitchen 

 

Assists the Gaddi’s Chef with the day to day operation of the kitchen, provides service to the Restaurants and its Private Dining Rooms if applicable.  Assists with creating, developing, costing and implementing of new dishes.  Supports training, coaching and development efforts of all chefs in the team.  Adheres to all relevant health and safety codes as stipulated by the Hotel and the local health authorities (FEHD).  Fully supports and contributes to the company’s CSR initiatives. Runs the Kitchen in all aspects during the Gaddi’s Chef’s absence. 

 

Key Accountabilities:

  • Sources best quality ingredients and incorporates them into the relevant outlet’s menus
  • Conducts daily checks of quality of produced items
  • Ensures proper handling, storage and usage of raw and cooked materials
  • Ensures best-possible stock turnover to ensure freshness of products
  • Ensures daily orders are issued in a timely manner

 

Job Specification:

  • Secondary / High school is essential and preferably with Food hygiene certificate
  • 2 to 4 years’ experience as Chef de Partie position with Michelin starred restaurant and hotel background. Fine dining and international experience is an advantage.
  • Basic knowledge of Microsoft Office applications
  • Knowledge of hotel’s standard on food production
  • Knowledge in French cuisine
  • Knowledge in checking quality of raw materials and food production
