Executive Steward

The Peninsula Chicago is seeking a creative Executive Steward who is highly organized to work with our operations and create a memorable guest experience.

Key Accountabilities:

  • Ensure enough stock of cleaning materials every first week of the month.
  • Ensure adequate supply of tableware and equipment is available for Banquets and restaurant operation.
  • Responsible for generating a breakage report on a monthly basis and implement new systems to minimize if necessary.
  • Ensure that F&B equipment storerooms including off-site storage inventory is itemized and kept up to date on a monthly basis.
  • Ensures adequate staffing for the kitchens and dishwashing areas. 
  • Ensures stewarding labor cost and supplies are within budget. 
  • Responsible for developing health, hygiene and food safety policies and procedures based on company standards, industry best practices, local regulations and codes. 
  • Responsible for establishing working relations with the different departments and be able to provide support, technical expertise, and practical hygiene and food safety approach to ensure health and hygiene programs are effective. 
  • Ensures that all Hygiene, Sanitation, and Food Safety policies are being implemented, understood, routinely assessed, improved upon and well-maintained through a solid document control & audit system. Scope of audits to include all operational departments and physical areas of the hotel where guests or employees are present.
  • Conducts regular inspections or testing in key areas to assess and monitor the effectiveness of the implemented policies and procedures. Reports findings to GM/HM, including the ones obtained by third party labs, with preventive actions to be taken.
  • Conducts regular audits with the Procurement Team to assess hygiene and sanitation compliance of suppliers and third-party vendors.

 

General Requirements:

  • Minimum of 5 years of experience in a similar role, preferably in a luxury hotel. 
  • Must have excellent organizational and communication skills.
  • Strong attention to detail.
  • Ability to manage and work in a diverse team.
