Executive Chinese Chef
The Peninsula Bangkok, a luxurious five-star property situated along the scenic Chao Phraya River, is seeking a visionary and innovative Executive Chinese Chef to lead our Chinese culinary operation. Job Purpose
The Executive Chinese Chef is responsible for planning, directing, and overseeing the day-to-day operations of the Chinese Restaurant and Banquet Kitchen. This includes managing the preparation and production of Chinese cuisine, Chinese banquets and mooncakes, while ensuring the highest quality standards are consistently maintained.
Key Responsibilities
- Uphold and enhance the Chinese culinary reputation of The Peninsula Bangkok by devising strategies to ensure guest satisfaction and seamless restaurant operations.
- Manage all aspects of the Chinese kitchen operations, including food quality, production standards, menu design, costing, special events, inventory, supplier relations, staff scheduling, and team development.
- Lead the Chinese kitchen team to deliver exceptional culinary experiences and strong financial performance.
- Monitor and anticipate market trends and guest preferences, making recommendations for product or operational adjustments based on local conditions, guest demographics, product availability, cost considerations, and seasonal factors.
- Drive innovation by refreshing menus, designing creative seasonal offerings, and planning promotional activities.
- Collaborate with the Food and Beverage Division and hotel leadership to develop new products and initiatives, manage budgets, monitor financial outcomes, and champion continuous improvement.
- Ensure compliance with all statutory personnel, hygiene, and environmental standards, including HACCP guidelines.
- Recruit, mentor, and manage the culinary team while fostering a culture aligned with the mission, vision, and values of The Peninsula Hotels.
Job Requirements
- At least 3 years of experience as an Executive Chinese Chef in internationally renowned luxury hotels.
- International exposure with expertise in Cantonese cuisine, particularly in Chinese restaurant and Chinese banquet, is highly desirable.
- Strong knowledge of culinary trends, cuisines, and cultures, with the creativity to develop innovative dishes and menus while maintaining effective cost controls.
- Strong leadership and communication skills with a demonstrated ability to plan and conduct training programs.
- Detail-oriented culinary expert who thrives in high-pressure environments.
