Key Accountabilities:
- Lead the kitchen team in delivering authentic, high-quality Cantonese cuisine.
- Ensure traditional techniques and regional flavors are respected while allowing for modern presentation and innovation.
- Develop seasonal menus that reflect both guest preferences and culinary trends within Cantonese cuisine.
- Oversee daily kitchen operations, ensuring efficiency, cleanliness, and compliance with hygiene standards.
- Monitor food preparation and portion sizes to maintain consistency and cost control.
- Collaborate with service teams to ensure smooth coordination between kitchen and dining room.
- Manage food cost, inventory, and waste reduction strategies.
- Ensure full compliance with local food safety regulations and internal standards.
- Train, mentor, and evaluate kitchen staff, fostering a respectful and inclusive team culture.
- Promote emotional intelligence, teamwork, and accountability within the kitchen.
- Address performance issues constructively and support career development.
Requirements:
- Minimum 10 years of culinary experience, with at least 5 years in a leadership role within a Cantonese or broader Chinese fine dining kitchen.
- Proven track record of managing high-volume operations while maintaining exceptional quality..
- Good knowledge of Cantonese cuisine, including traditional techniques, regional specialties, and ingredient sourcing.
- Ability to balance authenticity with modern presentation and innovation.
- Skilled in menu development, seasonal planning, and dietary accommodations.
- Strong leadership skills with the ability to inspire, train, and manage a multicultural kitchen team.
- Proficient in cost control, inventory management, and supplier negotiations.
- Familiar with HACCP, food safety regulations, and luxury hospitality standards.
