Cost Control Manager

Business Unit:  The Peninsula Manila
Location:  Makati

Overview of the role

 

We are looking for a passionate individual who will advise management and provide reports on all variable expenses including but not limited to food, beverage, tobacco, operating and guest supplies, and operating equipment together with informative operational data as quickly as possible so that timely corrective measures, if needed, can be taken.

 

Key Accountabilities:

  • Implement the cost control function and use effectively the software provided to allow a clear review and reporting of all operational costs vs. approved forecasts and budgets.
  • Performs recipe costing and analysis, menu analysis, daily food and beverage cost monitoring reports, monthly inventories with preparation of Journal Vouchers and system reporting
  • Assists in physical count and disposal of hotel assets, conducting spot-checks of all types of stocks in Operations including but not limited to kitchens, buffets and outlets to prevent pilferage and overstocking, portion test, buffet test, consumption test, kitchen/bar tests, garbage test, cocktail test, market survey, yield and butcher tests, bar control procedures with Minibar control, laundry stocks review, guest supplies control etc
  • Generate accurate daily, weekly and monthly reporting for Cost Control Management purpose
  • Prepare all month-end reporting and analysis. Review the results with the Director of Finance, the Assistant Director of Finance and the Director of Procurement, investigating variances and discrepancies to Budget/Forecast

 

General Requirements:

  • Graduate of Bachelor of Science in Business Administration or BS Accountancy, preferably a Certified Public Accountant
  • Should have at least 2-3 years experience in the same capacity
  • Above average knowledge of a hotel’s revenue process and documentation requirements.
  • Knowledgeable in Opera, Infrasys and Sun systems and Microsoft applications
  • Good oral and written communication skills
  • Excellent Supervisory and interpersonal skills
  • Responsible, hardworking, with good analytical ability, organized, motivated and a team player
