Executive Chef
Overview of the role
We are looking for a top-caliber, highly motivated, culinary professional who will be accountable for all aspects of kitchen operations. These include profitable culinary operation and production in accordance with company standards, food costs, adherence to Health and Safety regulations as well as recruitment and mentoring of all kitchen staff. All food produced for guests and staff alike should be monitored daily, to ensure the highest possible quality and standards are achieved and maintained.
Key Accountabilities
- Is responsible for all activities of kitchen operations, which includes staff scheduling, delegation of job tasks and monitoring and supervision of the hotel’s food production.
- Plans and develops menus considering factors such as produce availability, costs, market conditions, covers, seasonal factors etc. and to establish and maintain appropriate food portions with respect to the hotel’s pricing policy.
- Co-ordinates and supervises the ordering of all food, consumable supplies and equipment, and ensures food costs are controlled whilst upholding elevated quality and minimizing food wastage.
- Liaises with Purchasing to ensure produce is procured at the best price and in accordance to purchasing policies.
- Participates in the selection of culinary menu design and promotional programs including items such as special menu pricing etc.
General Requirements
- At least 3-5 years’ experience as Executive Chef in a 5 Star Hotel, strong Knowledge of Fine Dining, previous Chef De Cuisine
- Culinary Degree or Bachelor in Hotel Restaurant Management, HACCP Certification
- Technical knowledge and job skills training for all food procedures. Knowledge in up to date food preparation and presentation
- Communicates food trends and market needs to staff, Organizational and planning skills in project conceptualization and execution
- Possess a strong command in hygiene and food safety standards. Strong leadership skills, self-motivated, a dynamic kitchen leader
