Sous-Chef - Lobby

Deliciously Parisian, The Peninsula Paris hotel is ideally located in the heart of the capital, just steps away from some of the world's most famous monuments, museums, and luxury boutiques. The iconic Haussmannian building comprises 200 luxurious rooms, including 93 suites that are among the most spectacular in the capital. In collaboration with the wonderful team at The Peninsula Paris hotel, we are looking for a Sous Chef to join our Lobby kitchen.

 

Main responsibilities:

 

  • Ensure the highest quality of products, the preparation of dishes served in terms of taste, temperature, and execution speed for an optimal culinary experience for the client.
  • Participate in food tastings, then present and train your team to prepare the dishes for each menu change.
  • Bring, with agreement from the hierarchy, any modifications deemed useful in the organization or methods of the kitchen after ensuring the new rules comply with the general policy of the establishment.
  • Participate in the development of the range by seeking new products and suppliers.
  • Ensure that the portions served at your point of sale are in line with the portions approved on the technical sheets.
  • In collaboration with your superior, ensure the training, recruitment, and support of your team as well as the monitoring of their working hours.
  • Supervise and develop your team in collaboration with the 1st Sous Chef and the Head Chef (recruitment, monitoring trial and probationary periods, managing training needs, disciplinary actions).

  • Mastery of confectionery cooking techniques.
  • Holder of a BAC PRO – BEP – CAP or equivalent experience in a similar environment.
