We are thrilled to be seeking a Demi Chef de Partie - Dim Sum for The Canton Blue restaurant who will be responsible for participating in all aspects of the department day-to-day operations and for ensuring that hotel standards and guidelines are followed and maintained continuously.

Key Accountabilities

 

  • Promote The Peninsula London to becoming a recognized culinary destination by creating memorable guest experiences through artistry and uncompromised passion for excellence.
  • Produce all food required for the assigned section at the highest standard.
  • Checking ordering and requisitions to ensure budgeted costs.
  • Motivate, supervise and coach departmental Commis Chef in maintaining a culture in compliance with mission, vision, values, and cores principles HSH.
  • Ensure personnel, physical and environmental hygiene is maintained in adherence to HACCP.
  • Always keep the kitchen equipment in pristine condition to maximise its operating life.

 

General Requirements

 

  • Good Cantonese cuisine experience and understanding of current culinary trends and classics.  
  • Experience of a similar role in a Cantonese restaurant or luxury 5* hotel.  
  • Previous relevant culinary qualifications or certifications.   
  • Excellent time management and organizational skills, highly adaptable, naturally positive.
  • Good communication skills, flexibility, and capability of working under pressure.
