The Repulse Bay is seeking for a Chef de Cuisine, Spices (Southeast Asian Cuisine) in supporting the kitchen operation in Spices.

Key Accountabilities

  • Promote Spices in becoming a recognized culinary destination by creating memorable guest experiences through artistry, communication with customers and uncompromised passion for excellence.
  • Collaborate with the Executive Chef and EAM – F&B to develop plans for activities, promotions, menus, and the implementation according to annual marketing plans.
  • Ensure personnel, physical and environmental hygiene is maintained in adherence to HACCP, supervise departmental employees grooming daily.
  • Develop, motivate, supervise and coach departmental employees in maintaining a culture in compliance with our mission, vision, values, and core HSH principles.

 

General Requirements

  • Around 3 – 5 years of experience gained in luxury hotel or a similar establishment with southeast asian cuisine experience.
  • Sound knowledge of food and beverage management and production skills.
  • Thorough knowledge and experience of menu planning and cost-control.
  • Knowledge of HACCP systems and ISO 22000 is an advantage.
  • Strong leadership skill and excellent interpersonal skills.
  • Be innovative and open-minded.
  • Good command of written and spoken English.
